Break out the grill and take advantage of the summer sun with this simple but flavorful dish. Or, if the weather’s chilly, make it in the broiler and bring a touch of summer into your winter kitchen.
Summery Cilantro-Lime Chicken
For the marinade:
- 1/4 C lime juice
- 2 T soy sauce
- 1 T honey
- 1 T olive or grapeseed oil
- 1 T lime zest
- 1/4 t ground red pepper (optional)
- 1/3 C fresh cilantro, finely chopped
For the chicken:
- 4 chicken thighs, with or without skin (nutritional information panel is for chicken with skin)
Combine all but the chicken in a zip-lock bag or container with a lid and whisk together. Add chicken and shake to coat well with marinade. Marinate for at least one hour and up to 8 hours (marinating longer may ruin the texture of the meat.)
Remove the chicken from the marinade. (Do not rinse or pat dry.) Preheat the broiler, cover a cookie sheet with aluminum foil, and lay the chicken pieces out so that they’re not touching.
Place cookie sheet on the middle oven rack and broil 10-15 minutes, then turn and broil an additional 10-15 minutes on the other side. Internal temperature should reach 175 degrees on a meat thermometer. If chicken is not browned when when the meat reaches 175 degrees, raise the oven rack to the next level and continue broiling until browned.
