Spicy Beef Casserole

This dish is as savory as they come

Don’t let the addition of spices we typically associate with sweets fool you — this dish is as savory as they come. Comfort food at its best, this casserole is best served with a light and low-calorie side such as grilled asparagus or fresh cucumbers with dilled sour cream.

Spicy Beef Casserole

(serves )

  • 1 pound 90% or 93% lean hamburger
  • 2 C chopped onion
  • 2 C diced potatoes
  • 1 ½ C fresh or frozen sweet peas
  • 2 C crushed tomatoes
  • 1 C water
  • ½ t cinnamon
  • ½ t turmeric
  • ¼ t cumin
  • ¼ t rosemary
  • ½ t ground ginger
  • ¼ t salt

To make:

Crumble the hamburger into the sauce/soup pan and cook on high heat, stirring occasionally, till the meat is browned. Add all the other ingredients and simmer for approximately 25 minutes, till it becomes thick and chili-like in consistency. Stir often, scraping the bottom of the pan well, to prevent sticking.

Transfer to a deep baking dish. Combine the breadcrumbs, parmesan, and a pinch of salt and sprinkle over the top of the beef and vegetable mixture. Bake at 400 till breadcrumbs and cheese are lightly browned.
