Pomegranate is a rich source of vitamin C, antioxidants, Fiber and anti-inflammatory properties
As with most salad dressings, watch your portion size when serving this fruity vinaigrette. The oil makes it rather high-calorie (although it’s healthy fat), and a serving is about 2 tablespoons.
- 4 t grapeseed oil
- 1 T honey
- 1/4 C pomegranate juice
- 2 T balsamic vinegar
- 1 t Dijon mustard
Combine all ingredients in a small bowl and whisk together so that mustard and honey are thoroughly incorporated. (Hint: make a double batch and store, refrigerated, for up to 2 weeks.)
